Ninja Double Stack XL 9.5L Air Fryer – SL400

Ingredients

  • 225g sliced mushrooms
  • 1 small onion, coarsely chopped
  • 2 cloves garlic
  • 685g 85% lean ground turkey
  • 2 eggs, lightly beaten
  • 1 tablespoon tomato paste
  • 30g almond meal
  • 2 tablespoons milk
  • 1 tablespoon dried oregano
  • 1 teaspoon salt
  • ½ teaspoon freshly ground black pepper
  • 1 Roma tomato, thinly sliced

Directions

  1. Lightly coat a round pan with olive oil and set aside.
  2. In a food processor with a metal blade, blend the mushrooms, onion, and garlic until finely chopped. Transfer the mixture to a large mixing bowl.
  3. Add the turkey, eggs, tomato paste, almond meal, milk, oregano, salt, and black pepper. Mix gently until thoroughly combined. Transfer the mixture to the prepared pan and shape it into a loaf. Arrange the tomato slices on top.
  4. Air fry at 175°C for 50 minutes or until the meatloaf is nicely browned and a thermometer inserted into the thickest part registers 75°C. Remove from the air fryer and let rest for about 10 minutes before slicing.
