- 2 large eggs, beaten
- 450g cottage cheese, whole milk or 2%
- 225g grated sharp Cheddar cheese, divided
- 115g sour cream
- 1/2 teaspoon salt
- 1 teaspoon freshly ground black pepper
- 245g uncooked elbow macaroni
- 2 ham hocks (about 310g each), meat removed and diced
- 1 to 2 tablespoons oil
Directions
- In a large bowl, stir together the eggs, cottage cheese, 115g of the Cheddar cheese, sour cream, salt, and pepper.
- Stir in the macaroni and the diced meat.
- Spritz an air flyer—safe pan with oil.
- Pour the macaroni mixture into the prepared pan, ensuring all noodles are covered with sauce.
- Air fry at 180°C for 12 minutes. Stir in the remaining 115g of Cheddar cheese, making sure all the noodles are covered with sauce. Cook for 13 minutes more, until the noodles are tender. Let rest for 5 minutes before serving.
