Ingredients

  • 455g boneless, skinless chicken tenderloins
  • 460g jerk marinade
  • Olive oil
  • 4 large low-carb tortillas
  • 250g juliermed carrots
  • 120g peeled cucumber ribbons
  • 30g shredded lettuce
  • 235g mango or pineapple chunks

Directions

  1. In a medium bowl, coat the chicken with the jerk marinade, cover, and refrigerate for 1 hour.
  2. Insert the crisper plate in both baskets and spray lightly with olive oil.
  3. Place the chicken in each basket in a single layer and spray lightly with olive oil. Reserve any leftover marinade.
  4. Then insert the baskets in the unit. Select Zone I. Turn the dial to select AIR FRY. Set the temperature to 190°C and set the time to 8 minutes. Press the MATCH COOK button to copy Zone 1's settings to Zone 2. Press START/ PAUSE to begin cooking in both zones.
  5. Turn the chicken over and brush with some of the remaining marinade. Cook until the chicken reaches an internal temperature of at least 75°C, an additional 5 to 7 minutes.
  6. To assemble the wraps, fill each tortilla with 60g carrots, 30g cucumber, 5g lettuce, and 60g mango. Place one-quarter of the chicken tenderloins on top and roll up the tortilla. These are great served warm or cold.
