Swordfish-Cherry Tomato Skewer

Ingredients

  • 455g filleted swordfish
  • 60ml avocado oil
  • 2 tablespoons freshly squeezed lemon juice
  • 1 tablespoon minced fresh parsley
  • 2 teaspoons Dijon mustard
  • Sea salt
  • freshly ground black pepper
  • 85g cherry tomatoes

Directions

  1. Cut the fish into 1 ½-inch chunks, picking out any remaining bones.
  2. In a large bowl, whisk together the oil, lemon juice, parsley, and Dijon mustard. Season to taste with salt and pepper. Add the fish and toss to coat well. Cover and marinate the fish chunks in the refrigerator for 30 minutes.
  3. Remove the fish from the marinade. Thread the fish and cherry tomatoes on 4 skewers, alternating as you go.
  4. Place the skewers in the air fryer basket and cook at 200°C for 3 minutes. Flip the skewers and cook for 3 to 5 minutes longer until the fish is cooked through and an instant-read thermometer reads 60°C.
