  • 160 g mayonnaise
  • 2 tablespoon dried minced onion
  • 1 dill pickle spear, finely chopped
  • 2 teaspoon pickle juice
  • 1/4 teaspoon salt
  • 1/8 teaspoon freshly ground black pepper
  • 40 g plain flour
  • 1 egg, lightly beaten
  • 200 g panko bread crumbs
  • 2 teaspoon lemon pepper
  • 4 (170 g) tilapia fillets
  • Olive oil spray
  • 4 soft sub rolls
  • 4 lettuce leaves

Directions

  1. To make the tartar sauce, in a small bowl, whisk the mayonnaise, dried onion, pickle, pickle juice, salt, and pepper until blended. Refrigerate while you make the fish.
  2. Scoop the flour onto a plate; set aside.
  3. Put the beaten egg in a medium shallow bowl.
  4. On another plate, stir together the panko and lemon pepper.
  5. Preheat the air fryer to 205°C.
  6. Dredge the tilapia fillets in the flour, in the egg, and press into the panko mixture to coat.
  7. Once the unit is preheated, spray the zone 1 basket with olive oil and place a baking paper liner into the basket. Place the prepared fillets on the liner in a single layer. Lightly spray the fillets with olive oil.
  8. Cook for 8 minutes, remove the basket, carefully flip the fillets, and spray them with more olive oil. Reinsert the basket to resume cooking.
  9. When the cooking is complete, the fillets should be golden and crispy and a food thermometer should register 65°C. Place each cooked fillet in a sub roll, top with a little bit of tartar sauce and lettuce, and serve.
