Spinach And Red Pepper Egg Cups with Coffee-glazed Canadian Bacon

Ingredients

  • 4 large eggs
  • ¼ cup heavy (whipping) cream
  • ¼ tsp kosher salt
  • ¼ tsp freshly ground black pepper
  • ½ cup roasted red peppers (about 1 whole pepper), drained and chopped
  • ½ cup baby spinach, chopped
  • ¼ cup brewed coffee
  • 2 tbsp maple syrup
  • 1 tbsp light brown sugar
  • 6 slices Canadian bacon

Directions

  1. In a medium bowl, whisk together the eggs and cream until well combined with a uniform, light color. Stir in the salt, black pepper, roasted red peppers, and spinach until combined.
  2. Divide the egg mixture among 6 silicon muffin cups.
  3. In small bowl, whisk together the coffee, maple syrup and brown sugar.
  4. Using basting brush, brush the glaze onto both sides of each slice of bacon.
  5. Install a crisper plate in each of the two baskets. Place the egg cups in the Zone 1 basket and insert the basket in the unit. Place the glazed bacon in the Zone 2 basket, making sure the slices don’t overlap, and insert the basket in the unit. It is okay if the bacon overlaps a little bit.
  6. Select Zone 1, select BAKE, set the temperature to 163°C, and set the time to 13 minutes.
  7. Select Zone 2, select AIR FRY, set the temperature to 204°C, and set the time to 5 minutes. Select SMART FINISH.
  8. Press START/PAUSE to begin cooking.
  9. When the Zone 2 timer reads 2 minutes, press START/PAUSE. Remove the basket and use silicone-tipped tongs to flip the bacon. Reinsert the basket and press START/PAUSE to resume cooking.
  10. When cooking is complete, serve the egg cups with the Canadian bacon.
