Ingredients

  • 1 large egg
  • 1 teaspoon gelatin
  • 450 g pork mince
  • 230 g Italian-seasoned sausage, casings removed, crumbled
  • 80 ml Parmesan cheese
  • 60 ml finely diced onion
  • 1 tablespoon tomato paste
  • 1 teaspoon minced garlic
  • 1 teaspoon dried oregano
  • 1/4 teaspoon red pepper flakes
  • Sea salt and freshly ground black pepper, to taste
  • Keto-friendly marinara sauce, for serving

Directions

  1. Beat the egg in a small bowl and sprinkle with the gelatin. Allow to sit for 5 minutes.
  2. In a large bowl, combine the pork mince, sausage, Parmesan, onion, tomato paste, garlic, oregano, and red pepper flakes. Season with salt and black pepper.
  3. Stir the gelatin mixture, then add it to the other ingredients and, using clean hands, mix to ensure that everything is well combined. Form into 12-inch round meatballs.
  4. Set the air fryer to 204°C. Place the meatballs in the two air fryer drawers in a single layer. Air fry for 5 minutes. Flip and cook for 3 to 7 minutes more, or until an instant-read thermometer reads 72°C.
