Ingredients

  • 10 ounces cherry tomatoes, cut in half
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon olive oil
  • ¼ teaspoon kosher salt
  • ¼ teaspoon freshly ground black pepper
  • FOR THE GARLIC BREAD
  • 4 slices crusty Italian bread
  • 1 tablespoon olive oil
  • 3 garlic cloves, minced
  • ¼ teaspoon Italian seasoning
  • ¼ cup loosely packed fresh basil, thinly sliced
  • ½ cup part-skim ricotta cheese

Directions

  1. To prep the tomatoes: In a small bowl, combine the tomatoes, vinegar, oil, salt, and black pepper.
  2. To prep the garlic bread: Brush one side of each bread slice with the oil. Sprinkle with the garlic and Italian seasoning.
  3. To cook the tomatoes and garlic bread: Install a broil rack in the Zone 1 basket (without the crisper plate installed). Place the tomatoes on the rack in the basket and insert the basket in the unit.
  4. Place 2 slices of bread in the Zone 2 basket and insert the basket in the unit.
  5. Select Zone 1, select AIR BROIL, set the temperature to 232°C and set the time to 10 minutes.
  6. Select Zone 2, select AIR FRY, set the temperature 182°C, and set the time to 10 minutes. Select SMART FINISH.
  7. Press START/PAUSE to begin cooking.
  8. When the Zone 2 timer reads 5 minutes, press START/PAUSE. Remove the basket and transfer the garlic bread to a cutting board. Place the remaining 2 slices of garlic bread in the basket. Reinsert the basket in the unit and press START/PAUSE to resume cooking.
  9. To assemble the bruschetta: When cooking is complete, add the basil to the tomatoes and stir to combine. Spread 2 tablespoons of ricotta onto each slice of garlic bread and top with the tomatoes. Serve warm or at room temperature.
