Ingredients
- 2 slices of sandwich bread
- ¼ cup shredded mozzarella cheese
- 6–8 slices pepperoni
- 1 tbsp tomato paste
- 2 tbsp tomato purée
- ½ tsp grated garlic
- ½ tsp dried Italian herbs
- 1 tsp extra virgin olive oil
- 2 boneless chicken thighs (skin-on for extra crispiness)
- 1 tbsp light soy sauce
- 1 tsp sesame oil
- 1 tsp Shaoxing wine (optional)
- 1 tsp grated ginger
- 1 clove garlic, minced
- ½ tsp white pepper
- 1 egg (beaten)
- ½ cup cornstarch
- ½ cup panko breadcrumbs
- 1 tbsp cooking oil (to coat for air frying)
- 1 bunch broccolini
- 1 tsp extra virgin olive oil
- Pinch of salt
- Pinch of black pepper
- 1 corn
- 7-15g butter
Directions
- Cut the cleaned corn in half and place half slice of butter on top of each
- Place corn on the rack of the lower basket
- Air fry at 180°C (350°F) for 12-15 minutes and remember to flip corn halfway.
- Mix all sauce ingredients together in a small bowl.
- Spread sauce on one slice of bread.
- Add mozzarella, pepperoni, then top with second slice of bread.
- Place pizza on the second layer of the lower basket
- Repeat the same on the top side: sauce → cheese → pepperoni.
- Air fry at 180°C for 7 minutes, until cheese is bubbly and bread is golden.
- Prepare the Chicken Cutlet
- Marinate the chicken thighs with soy sauce, sesame oil, Shaoxing wine, ginger, garlic, and white pepper for at least 30 minutes (or overnight for better flavor).
- Dredge the marinated chicken in cornstarch, then dip it in the beaten egg, and coat it with panko breadcrumbs, pressing down gently.
- Lightly spray or brush with cooking oil to help with crispiness.
- Air Fry the Chicken
- Place the breaded chicken on the rack of the upper basket, ensuring they are not overcrowded.
- Air-fry at 180°C for 10 minutes, then flip and air-fry for another 5-7 minutes at 200°C (390°F) until golden brown and crispy.
- Toss broccolini with olive oil, salt, and pepper.
- Place on the 2nd layer of the upper basket to catch the chicken drippings from above — for an extra boost of flavor.
- Air fry broccolini at 180°C for 7–8 mins until edges are crisp.
