Ingredients

  • 2 nos Eggplant
  • 1 whole head Garlic (chopped)
  • Bird eye chili (chopped)
  • 2tbsp Oyster sauce
  • 1 tbsp Soy sauce
  • 1tbsp Sugar
  • 1tsp Salt
  • Spring onion

Directions

  1. Set up ninja double stack
  2. Trim out the head of the eggplant, with some oil air fry them at 200°C for 15min
  3. In a pot heat up some oil, gentle fry out some garlic then chili till fragrant.
  4. Then off the heat add in seasoning and mix well
  5. Once the eggplant is cooked, split them in half but still attached
  6. Dress the eggplant with the sauce and cook it more at 200°C for 5min
  7. Lastly garnish with chopped spring onion
