Ingredients
- 2 nos Eggplant
- 1 whole head Garlic (chopped)
- Bird eye chili (chopped)
- 2tbsp Oyster sauce
- 1 tbsp Soy sauce
- 1tbsp Sugar
- 1tsp Salt
- Spring onion
Directions
- Set up ninja double stack
- Trim out the head of the eggplant, with some oil air fry them at 200°C for 15min
- In a pot heat up some oil, gentle fry out some garlic then chili till fragrant.
- Then off the heat add in seasoning and mix well
- Once the eggplant is cooked, split them in half but still attached
- Dress the eggplant with the sauce and cook it more at 200°C for 5min
- Lastly garnish with chopped spring onion
