Ingredients

  • 240 ml milk
  • 50 g granulated sugar, plus 2 tablespoons
  • 30 g scone mix
  • 1 teaspoon vanilla extract
  • 2 eggs
  • 2 tablespoons melted butter
  • Cooking spray
  • 50 g desiccated, sweetened coconut
  • 50 g blanched finely ground almond flour
  • 55 g powdered sweetener
  • 2 tablespoons unsweetened cocoa powder
  • 1/2 teaspoon baking powder
  • 55 g unsalted butter, softened
  • 1 large egg
  • 35 g chopped pecans
  • 40 g low-carb, sugar-free chocolate chips

Directions

  1. Place all ingredients except coconut in a medium bowl.
  2. Using a hand mixer, beat on high speed for 3 minutes.
  3. Let sit for 5 minutes.
  4. Preheat the air fryer to 164°C.
  5. Spray a baking pan with cooking spray and place
  6. Pour filling into pan and sprinkle coconut over top.
  7. Cook pie for 20 to 23 minutes or until center sets.
  8. In a large bowl, mix almond flour, sweetener, cocoa powder, and baking powder. Stir in butter and egg. Fold in pecans and chocolate chips. Scoop mixture into a round baking pan. Place pan into the zone 2 air fryer drawer. Adjust the temperature to 148°C and bake for 20 minutes. When fully cooked a toothpick inserted in center will come out clean. Allow 20 minutes to fully cool and firm up.
