Ingredients
- 1 teaspoon olive oil, plus more for spraying
- 2 teaspoons lime juice
- 1 teaspoon honey
- 1 teaspoon minced garlic
- 1 teaspoon chilli powder
- Salt
- 340g medium cooked shrimp, thawed, deveined, peeled
- 405g cooked brown rice
- 1 (425g) can seasoned black beans, warmed
- 1 large avocado, chopped
- 155g sliced cherry tomatoes
Directions
- Insert a crisper plate in a basket and spray it lightly with olive oil.
- In a medium bowl, mix together the lime juice, 1 teaspoon of olive oil, honey, chilli powder, garlic, and salt to make a marinade.
- Add the shrimp and toss to coat evenly in the marinade.
- Place the shrimp in the basket, then insert the basket in Zone 1. Select Zone 1. Turn the dial to select AIR FRY, set the temperature to 200°C, and set the time to 5 minutes. Press START/PAUSE to begin cooking. Shake the basket and cook until the shrimp are cooked through and starting to brown, an additional 5 to 10 minutes.
- To assemble the bowls, spoon 1/4 of the rice, black beans, avocado, and cherry tomatoes into each of four bowls. Top with the shrimp and serve.
