Bacon Wrapped Avocado and Simple Scotch Eggs

Ingredients

  • 1 avocado, sliced, peeled, and pitted
  • 2 slices bacon
  • Fresh parsley, for serving (optional)
  • Sea salt flakes, for garnish (optional)
  • 4 large hard boiled eggs
  • 1 (340g) package pork sausage meat
  • 5 slices thick-cut bacon

Directions

  1. Preheat the air fryer to 160°C.
  2. Line a small baking sheet with foil or parchment paper.
  3. Cut the avocado into equal slices.
  4. Wrap each avocado slices with bacon strips.
  5. Line your bacon wrapped avocado slices on a baking sheet and place it in the zone 1 air fryer basket and air fry for 5 minutes.
  6. Flip the avocado over and air fry for another minutes, or until the bacon is cooked to your liking.
  7. Serve on a bed of fresh parsley, if desired, and sprinkle with salt flakes, if desired.
  8. Best served fresh. Store extras in an airtight container in the fridge for up 4 days.
  9. Reheat in a preheated 160° air fryer for 4 minutes, or until heated through.
  10. Slice the sausage meat into four parts and place each part into a large circle.
  11. Put an egg into each circle and wrap it in the sausage. Pi:I in the refrigerator for i hour.
  12. Preheat the air fryer to 235°C
  13. Make a cross with two pieces of thick-cut bacon. Put a wrapped egg in the center, fold the bacon over top of the egg, and secure with a toothpick.
  14. Air fry in the preheated zone 2 air fryer basket for 25 minutes.
  15. Serve immediately.
