Ingredients

  • 450g chicken thigh mince
  • 110g shredded Mozzarella cheese
  • 1 teaspoon dried parsley
  • ½ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • 1 large egg
  • 60g pork rinds, finely ground
  • 190g long-grain white rice, rinsed and drained
  • 120g cut frozen green beans (do not thaw)
  • 1 tablespoon minced fresh ginger
  • 3 loves garlic, minced
  • 1 tablespoon toasted sesame oil
  • 1 teaspoon kosher salt
  • 1 teaspoon black pepper
  • 450g chicken wings, preferably drumettes
  • Ninja Double Stack XL 9.5L Air Fryer – SL400

Directions

  1. In a large bowl, mix chicken mince, Mozzarella, parsley, garlic powder, and onion powder. Form into four patties.
  2. Place patties in the freezer for 15 to 20 minutes until they begin to firm up.
  3. Whisk egg in a medium bowl. Place the ground pork rinds into a large bowl.
  4. Dip each chicken patty into the egg and then press into pork rinds to fully coat. Place patties into the zone 1 air fryer drawer.
  5. Adjust the temperature to 180°C and air fry for 12 minutes.
  6. Patties will be firm and cooked to an internal temperature of 76°C when done. Serve immediately.
  7. In a baking pan, combine the rice, green beans, ginger, garlic, sesame oil, salt, and pepper. Stir to combine. Place the chicken wings on top of the rice mixture.
  8. Cover the pan with foil. Make a long slash in the foil to allow the pan to vent steam. Place the pan in the zone z air fryer drawer. Set the air fryer-to 190°C for 3 minutes.
  9. Remove the foil. Set the air fryer to 200°C for 10 minutes, or until the wings have browned and rendered fat into the rice and vegetables, turning the wings halfway through the cooking time.
