Ingredients

  • 1/2 cup walnuts
  • 2 tablespoons salted butter
  • 2 tablespoons granular erythritol
  • 4 ounces full-fat cream cheese, softened
  • 1 large egg
  • 1/2 teaspoon vanilla extract
  • 2 tablespoons powdered erythritol
  • 2 teaspoons unsweetened cocoa powder
  • 1 teaspoon espresso powder

Directions

  1. Put butter, granular erythritol and walnuts în a food processor. Pulse until all the ingredients stick together to form a dough.
  2. Place dough into 4 inch springform pan and put into the air fryer basket.
  3. Set the temperature to 200°C, then set the timer for 5 minutes.
  4. When timer goes off, remove crust and allow it to cool.
  5. Combine cream cheese with vanilla extract, egg, powdered erythritol, espresso powder and cocoa powder until smooth in a medium bowl.
  6. Pour mixture on top of baked walnut crust and put into the air fryer basket.
  7. Set the temperature for 150°C, then set the timer for 10 minutes.
  8. Once fully cooked, allow to chill for 2 hours before serving.
