Ingredients

  • 34 g small, peeled, and deveined raw shrimp
  • 85g soft white cheese, room temperature
  • 2 tablespoons natural yoghurt
  • 1 teaspoon lemon juice
  • 1 teaspoon dried dill weed, crushed
  • Salt, to taste
  • 4 Small hothouse cucumbers, each approximately 6 inches long

Directions

  1. Pour 4 tablespoons water in bottom of air fryer drawer.
  2. Place shrimp in air fryer basket in single layer and air fry at 200°C for 4 to 5 minutes, just until done. Watch carefully because shrimp cooks quickly, and overcooking makes it tough.
  3. Chop shrimp into small pieces, no larger than ½ inch. Refrigerate while mixing the remaining ingredients.
  4. With a fork, mash and whip the soft white cheese until smooth.
  5. Stir in the yoghurt and beat until smooth. Stir in lemon juice, dill weed, and chopped shrimp.
  6. Taste for seasoning. If needed, add ¼ to ½ teaspoon salt to suit your taste.
  7. Store in refrigerator until serving time.
  8. When ready to serve, wash and dry cucumbers and split them lengthwise. Scoop out the seeds and turn cucumbers upside down on paper towels to drain for 10 minutes.
  9. Just before filling, wipe centres of cucumbers dry. Spoon the shrimp mixture into the pirogues and cut in half crosswise. Serve immediately.
