Ingredients
- 34 g small, peeled, and deveined raw shrimp
- 85g soft white cheese, room temperature
- 2 tablespoons natural yoghurt
- 1 teaspoon lemon juice
- 1 teaspoon dried dill weed, crushed
- Salt, to taste
- 4 Small hothouse cucumbers, each approximately 6 inches long
Directions
- Pour 4 tablespoons water in bottom of air fryer drawer.
- Place shrimp in air fryer basket in single layer and air fry at 200°C for 4 to 5 minutes, just until done. Watch carefully because shrimp cooks quickly, and overcooking makes it tough.
- Chop shrimp into small pieces, no larger than ½ inch. Refrigerate while mixing the remaining ingredients.
- With a fork, mash and whip the soft white cheese until smooth.
- Stir in the yoghurt and beat until smooth. Stir in lemon juice, dill weed, and chopped shrimp.
- Taste for seasoning. If needed, add ¼ to ½ teaspoon salt to suit your taste.
- Store in refrigerator until serving time.
- When ready to serve, wash and dry cucumbers and split them lengthwise. Scoop out the seeds and turn cucumbers upside down on paper towels to drain for 10 minutes.
- Just before filling, wipe centres of cucumbers dry. Spoon the shrimp mixture into the pirogues and cut in half crosswise. Serve immediately.
