Ingredients

  • 2 cups cooked rice (for cooked rice recipe, refer to Rice Recipe: White Rice)
  • 2 tablespoons vegetable oil
  • 2 cloves garlic (minced)
  • 1 small onion (chopped)
  • 1-2 red chilies (sliced, optional)
  • 1 cup mixed vegetables (peas, carrots, corn, etc.)
  • 2 tablespoons soy sauce
  • 1 tablespoon sweet soy sauce (kecap manis)
  • 1-2 eggs (beaten)
  • Green onions (sliced, for garnish)
  • Optional: cooked chicken, shrimp, or tofu (for protein)

Directions

  1. Prepare the mixture: In a bowl, combine the cooked rice, vegetable oil, minced garlic, chopped onion, sliced chilies, and mixed vegetables. Mix well to combine.
  2. Add sauces: Stir in the soy sauce and sweet soy sauce until the rice is evenly coated.
  3. Add protein (if desired): If you're adding chicken, shrimp, or tofu, fold it in at this stage.
  4. Cook in the Double Stack: Spread the rice mixture evenly in the Double Stack Air Fryer basket. Air fry for about 10-12 minutes, 175°C, stirring halfway through to ensure even cooking.
  5. Add eggs: Once the rice is heated through, make a well in the center of the rice, pour in the beaten eggs, and stir to combine. Cook for an additional 2-3 minutes until the eggs are fully cooked.
  6. Serve: Garnish with sliced green onions and enjoy!
