  • 1 cup all-purpose flour
  • 1⁄2 cup granulated sugar
  • 1 cup packed light brown sugar, divided
  • 5 tablespoons unsweetened cocoa powder, divided
  • 2 teaspoons baking powder

  • 1/2 cup unsweetened almond milk
  • 2 teaspoons vanilla extract
  • 2 tablespoons vegetable oil
  • 1 cup freshly brewed coffee
  • 1 cup all-purpose flour
  • 1⁄2 cup granulated sugar, plus 1/2 cup
  • 2 teaspoons baking powder
  • 1/4 teaspoon kosher salt
  • 1/2 cup unsweetened almond milk
  • 2 teaspoons vanilla extract, divided
  • 2 tablespoons vegetable oil
  • 3/4 cup hot water
  • 2 teaspoons cornstarch

Directions

  1. In a medium bowl, combine the flour, granulated sugar, 1⁄2 cup of brown sugar, 3 tablespoons of cocoa powder, the baking powder, and salt. Stir in the almond milk, vanilla, and oil to form a thick batter.
  2. Spread the batter in the bottom of the Zone 1 basket. Sprinkle the remaining 1/2 cup brown sugar and 2 tablespoons of cocoa powder in an even layer over the batter. Gently pour the hot coffee over the batter (do not mix).
  3. In a medium bowl, combine the flour, cup of granulated sugar, the baking powder, and salt. Stir in the almond milk, 2 teaspoons of vanilla, and the oil to form a thick batter.
  4. Spread the batter in the bottom of the Zone 2 basket.
  5. In a small bowl, whisk together the hot water, cornstarch, and remaining 1⁄2 cup of sugar and 1⁄2 teaspoon of vanilla. Gently pour over the batter (do not mix).
  6. Insert both baskets in the unit.
  7. Select Zone 1, select BAKE, set the temperature to 165°C, and set the timer to 25 minutes. Select MATCH COOK to match Zone 2 settings to Zone 1.
  8. Press START/PAUSE to begin cooking.
  9. When cooking is complete, the tops of the cakes should be dry and set.
  10. Let the cakes rest for 10 minutes before serving. The pudding will thicken as it cools.
