Ingredients

  • 685g flank steak
  • salt
  • freshly ground black pepper
  • 160ml olive oil
  • 160ml freshly squeezed lime juice
  • 40g chopped fresh cilantro
  • 4 teaspoons minced garlic
  • 1 teaspoon ground cumin
  • 1 teaspoon chilli powder

Directions

  1. Insert a crisper plate in a basket and spray it with olive oil.
  2. Place the flank steak in a large mixing bowl. Season with salt and pepper.
  3. Add the olive oil, lime juice, cilantro, cumin, garlic, and chilli powder and toss to coat the steak.
  4. For the best flavour, let the steak marinate in the refrigerator for about 1 hour.
  5. Place the steak in the basket, then insert the basket in Zone 1. Select Zone 1. Turn the dial to select ROAST, set the temperature to 200°C, and set the time to 7 minutes. Press START/PAUSE to begin cooking.
  6. Using tongs, flip the steak and roast for 7 minutes more.
  7. Cook the steak to your desired level of doneness. For medium-rare, cook until the internal temperature reaches 55°C, or 60°C for medium. Avoid overcooking to prevent the steak from drying out.
  8. Let the steak rest for about 5 minutes, then cut into strips.
