Ingredients

  • 1 cup buttermilk
  • ¼ cup butter, melted
  • 2 eggs
  • 1½ cups all-purpose flour
  • 1½ cups cornmeal
  • ⅓ cup sugar
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 4 scallions, minced
  • Vegetable oil

Directions

  1. Place the Cook & Crisp Basket in your Pressure Cooker Steam Fryer.
  2. Mix the buttermilk, butter and eggs in a suitable mixing bowl. In a second bowl mix the flour, cornmeal, sugar, baking soda and salt. Add the dry recipe ingredients to the wet recipe ingredients, stirring just to mix. Stir in the minced scallions and refrigerate the prepared batter for around 30 minutes.
  3. Shape the prepared batter into 2-inch balls. Brush or grease the balls with oil.
  4. Put on the Smart Lid on top of the Ninja Foodi Steam Fryer.
  5. Move the Lid Slider to the “Air Fry/Stovetop“. Select the “Air Fry“ mode for cooking.
  6. Air-fry the hush puffins in two batches at 180°C for around 8 minutes, turning them over after 6 minutes of the cooking process.
  7. Serve warm with butter.
