- 60ml coconut oil, melted
- 55g cream cheese, softened
- 100 g granulated sweetener
- 1 large egg, whisked
- 190g blanched finely ground almond flour
- 1 teaspoon almond extract
Directions
- Combine all ingredients in a large bowl to form a firm ball.
- Place dough on a sheet of plastic wrap and roll into a 12-inch-long log shape. Roll log in plastic wrap and place in refrigerator 30 minutes to chill.
- Remove log from plastic and slice into twelve equal cookies. Cut two sheets of baking paper to fit the two air fryer baskets. Place the cookies on the two ungreased sheet and put into the two air fryer baskets. Adjust the temperature to 160°C and bake for 10 minutes, turning cookies halfway through cooking. They will be lightly golden when done.
- Let cool 15 minutes before serving to avoid crumbling.
