  • 90 g shredded cabbage
  • 60 ml full-fat sour cream
  • 2 tablespoons full-fat mayonnaise
  • 20 g chopped pickled jalapeños
  • 2 (85 g) cod fillets
  • 1 teaspoon chilli powder
  • 1 teaspoon cumin
  • 1/2 teaspoon paprika
  • 1/4 teaspoon garlic powder
  • 1 medium avocado, peeled, pitted, and sliced 1/2 medium lime

  • Olive or vegetable oil, for spraying
  • 450 g medium raw prawns, peeled and deveined
  • 6 tablespoon unsalted butter, melted
  • 120 g panko bread crumbs
  • 2 tablespoon garlic granules
  • 1 teaspoon salt
  • 1⁄2 teaspoon freshly ground black pepper
  • Garlic Butter Sauce
  • 115 g unsalted butter
  • 2 teaspoon garlic granules
  • 3/4 teaspoon salt (omit if using salted butter)

Directions

  1. Cod with Avocado
  2. In a large bowl, place cabbage, sour cream, mayonnaise, and jalapeños. Mix until fully coated. Let sit for 20 minutes in the refrigerator.
  3. Sprinkle cod fillets with chilli powder, cumin, paprika, and garlic powder. Place each fillet into the zone 1 air fryer drawer.
  4. Adjust the temperature to 188°C and set the timer for 10 minutes.
  5. Flip the fillets halfway through the cooking time. When fully cooked, fish should have an internal temperature of at least 64°C.
  6. To serve, divide slaw mixture into two serving bowls, break cod fillets into pieces and spread over the bowls, and top with avocado. Squeeze lime juice over each bowl. Serve immediately.

  9. Preheat the air fryer to 204°C. Line the zone 2 air fryer drawer with baking paper and spray lightly with oil.
  10. Place the prawns and melted butter in a zip-top plastic bag, seal, and shake well, until evenly coated.
  11. In a medium bowl, mix together the breadcrumbs, garlic, salt, and black pepper.
  12. Add the prawns to the panko mixture and toss until evenly coated. Shake off any excess coating.
  13. Place the prawns in the prepared drawer and spray lightly with oil.
  14. Cook for 8 to 10 minutes, flipping and spraying with oil after 4 to 5 minutes, until golden brown and crispy.
  15. Garlic Butter Sauce
  16. In a microwave-safe bowl, combine the butter, garlic, and salt and microwave on 50% power for 30 to 60 seconds, stirring every 15 seconds, until completely melted.
  17. Serve the prawns immediately with the garlic butter sauce on the side for dipping.
