Ingredients

  • 1 tablespoon refined coconut oil, melted
  • 1 tablespoon maple syrup
  • 1 tablespoon nondairy milk
  • 1/2 teaspoon vanilla
  • 30g plus 2 tablespoons whole-wheat pastry flour or all-purpose gluten-free flour
  • 2 tablespoons coconut sugar
  • 1/4 teaspoon sea salt
  • 1/4 teaspoon baking powder
  • 2 tablespoons vegan chocolate chips
  • cooking oil spray (sunflower, safflower, or refined coconut)

Directions

  1. In a medium bowl, stir together the oil, maple syrup, milk, and vanilla. Add the flour, coconut sugar, salt, and baking powder. Stir just until thoroughly combined. Stir in the chocolate chips.
  2. Spray two baking pans that fit your air fryer lightly with oil. Drop tablespoonfuls of the batter onto the pans, leaving a little room in between in case they spread out a bit.
  3. Insert a crisper plate in a basket and place one pan in the basket. Then place one Stacked Meal Rack in the basket over the pan. Place the other pan on the rack, then insert the basket in unit.
  4. Select DOUBLE STACK PRO. Select Zone 1. Turn the dial to select BAKE, set the temperature to 175°C, and set the time to 7 minutes. Press START/PAUSE to begin cooking. Bake until lightly browned. Be careful not to overcook.
  5. Gently transfer to a cooling rack (or plate). Enjoy warm if possible!
