Ingredients

  • 3 medium fresh golden fleets (about 1 pound)
  • 3 medium fresh beets (about 1 pound)
  • 2 tablespoons lime juice
  • 2 tablespoons orange juice
  • ½ teaspoon fine sea salt
  • 1 tablespoon minced fresh parsley
  • 1 tablespoon minced fresh sage
  • 1 garlic clove, minced
  • 1 teaspoon grated orange zest
  • 3 tablespoons crumbled goat's cheese
  • 2 tablespoons sunflower kernels

Directions

  1. Scrub the beets and trim the tops by 1 inch.
  2. Place the beets on a double thickness of heavy-duty foil . Fold the foil around the beets, sealing tightly.
  3. Place a crisper plate in both drawers. Put the beets in a single layer in each drawer. Insert the drawers into the unit.
  4. Select zone 1, then AIR FRY, then set the temperature to 180°C with a 45-minute timer. To match zone 2 settings to zone 1, choose MATCH. To begin, select START/STOP.
  5. Remove the beets front the drawers after the timer has finished. Peel, halve, and slice them when they're cool enough to handle. Place them in a serving bowl.
  6. Toss in the lime juice, orange juice, and salt to coat. Sprinkle the beets with the parsley, sage, garlic, and orange zest. The sunflower kernels and boat’s cheese go on top.
