Ingredients

  • 225g (2 sticks) unsalted butter, at room temperature
  • 1 garlic clove, roasted and peeled
  • 1 tablespoon salt
  • 1 teaspoon freshly ground black pepper
  • 1 teaspoon minced shallot
  • 1 teaspoon minced fresh parsley
  • 1 teaspoon minced fresh sage
  • 1 teaspoon minced fresh rosemary
  • 4 (285g to 340g) rib eye steaks
  • salt
  • freshly ground black pepper

Directions

  1. In a small mixing bowl, combine the butter, roasted garlic, salt, pepper, shallot, parsley, sage, and rosemary until the herbs are fully and evenly incorporated into the butter.
  2. Cover the butter and refrigerate for about 1 hour.
  3. Season the steaks with salt and pepper.
  4. Place the steaks into the air fryer basket. Roast at 200°C for 4 minutes.
  5. Using tongs, flip the steaks and roast for 4 minutes more. Cook the steaks to your desired doneness. For medium-rare, cook to an internal temperature of 55°C, or for medium, 60°C.
  6. Place a dab of the butter on each steak. (Keep any remaining herb butter in the refrigerator for up to two days.)
