Ingredients
- 1 whole vanilla bean, split in half lengthwise, scraped
- 1 tbsp. light corn syrup
- 4 egg yolks
- 1 tsp. vanilla extract
- 3/4 C. heavy cream
- 5 tbsp. marshmallow paste
- 1/3 C. whole milk
- 5 peanut butter cookies, chopped
- 2 tbsp. granulated sugar

Directions
- In a medium saucepan, add the vanilla bean over medium-high heat, and toast for about 2-3 minutes, stirring continuously.
- Reduce the heat to medium-low and whisk in the egg yolks, heavy cream, milk, sugar, corn syrup and vanilla extract.
- Cook for about 2-3 minutes, stirring continuously.
- Remove from the heat and through a fine-mesh strainer, strain the mixture into an empty Ninja CREAMi pint container.
- Place the container into an ice bath to cool.
- After cooling, cover the container with the storage lid and freeze for 24 hours.
- After 24 hours, remove the lid from container and arrange into the outer bowl of Ninja CREAMi.
- Install the "Creamerizer Paddle" onto the lid of outer bowl.
- Then rotate the lid clockwise to lock.
- Press "Power" button to turn on the unit.
- Then press "GELATO" button.
- When the program is completed, with a spoon, create a 11/2-inch wide hole in the center that reaches the bottom of the pint container.
- Add the cookies into the hole and press "MIX-IN" button.
- When the program is completed, turn the outer bowl and release it from the machine.
- Transfer the gelato into serving bowls and serve immediately.
