- 2 medium potatoes
- 2 teaspoons extra-light olive oil
- oil for misting or cooking spray
- salt and pepper
Directions
- Peel the potatoes.
- Using a mandoline or paring knife, shave potatoes into thin slices, dropping them into a bowl of water as you cut them.
- Dry potatoes as thoroughly as possible with paper towels or a clean dish towel. Toss the potato slices with the oil to coat completely.
- Spray the air fryer basket with cooking spray and add potato slices.
- Stir and separate with a fork.
- Air fry at 200°C for 5 minutes. Stir and separate potato slices. Cook for 5 more minutes. Stir and separate potatoes again. Cook another 5 minutes.
- Season to taste.
