- 4 mahimahi fillets (4 ounces each)
- 1 tablespoon olive oil
- 1 tablespoon blackening seasoning
- Lemon wedges, for serving
- 1 pound carrots, peeled and cut into 1/2-inch rounds
- 2 teaspoon vegetable oil
- 1/2 teaspoon kosher salt
- 1/4 teaspoon freshly ground black pepper
- 1 tablespoon salted butter, cut into small pieces
- 1 tablespoon honey
- 2 tablespoon chopped fresh parsley

Directions
- To prep the mahimahi: Brush both sides of the fish with the oil and sprinkle with the blackening seasoning.
- To prep the carrots: In a large bowl, combine the carrots, oil, salt, and black pepper. Stir well to coat the carrots with the oil.
- To cook the mahimahi and carrots: Install a crisper plate in each of the two baskets. Place the fish in the Zone 1 basket and insert the basket in the unit. Place the carrots in the Zone 2 basket and insert the basket in the unit.
- Select Zone 1, select AIR FRY, set the temperature to 200°C, and set the timer to 14 minutes.
- Select Zone 2, select ROAST, set the temperature to 200°C, and set the timer to 30 minutes. Select SMART FINISH.
- Press START/PAUSE to begin cooking.
- When the Zone 2 timer reads 15 minutes, press START/PAUSE. Remove the basket and scatter the butter over the carrots, then drizzle them with the honey. Reinsert the basket and press START/PAUSE to resume cooking.
- When cooking is complete, the fish should be cooked through and the carrots soft.
- Stir the parsley into the carrots. Serve the fish with lemon wedges.
