Blackened Mahimahi With Honey-roasted Carrots

Ingredients

  • 4 mahimahi fillets (4 ounces each)
  • 1 tablespoon olive oil
  • 1 tablespoon blackening seasoning
  • Lemon wedges, for serving
  • 1 pound carrots, peeled and cut into 1/2-inch rounds
  • 2 teaspoon vegetable oil
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper
  • 1 tablespoon salted butter, cut into small pieces
  • 1 tablespoon honey
  • 2 tablespoon chopped fresh parsley

Directions

  1. To prep the mahimahi: Brush both sides of the fish with the oil and sprinkle with the blackening seasoning.
  2. To prep the carrots: In a large bowl, combine the carrots, oil, salt, and black pepper. Stir well to coat the carrots with the oil.
  3. To cook the mahimahi and carrots: Install a crisper plate in each of the two baskets. Place the fish in the Zone 1 basket and insert the basket in the unit. Place the carrots in the Zone 2 basket and insert the basket in the unit.
  4. Select Zone 1, select AIR FRY, set the temperature to 200°C, and set the timer to 14 minutes.
  5. Select Zone 2, select ROAST, set the temperature to 200°C, and set the timer to 30 minutes. Select SMART FINISH.
  6. Press START/PAUSE to begin cooking.
  7. When the Zone 2 timer reads 15 minutes, press START/PAUSE. Remove the basket and scatter the butter over the carrots, then drizzle them with the honey. Reinsert the basket and press START/PAUSE to resume cooking.
  8. When cooking is complete, the fish should be cooked through and the carrots soft.
  9. Stir the parsley into the carrots. Serve the fish with lemon wedges.
