Beef And Bean Taquitos With Mexican Rice

  • Taquitos
  • 1/2 pound ground beef (85 percent lean)
  • 1 tablespoon taco seasoning
  • 8 (6-inch) soft white corn tortillas
  • Nonstick cooking spray
  • 3/4 cup canned refried beans
  • 1/2 cup shredded Mexican blend cheese (optional)
  • Mexican Rice
  • 1 cup dried instant white rice (not microwavable)
  • 1/2 cups chicken broth
  • 1/4 cup jarred salsa
  • 2 tablespoon canned tomato sauce
  • 1 tablespoon vegetable oil
  • 1/2 teaspoon kosher salt

Directions

  1. Taquitos
  2. In a large bowl, mix the ground beef and taco seasoning until well combined. 2. Mist both sides of each tortilla lightly with cooking spray.
  3. Mexican Rice
  4. In the Zone 2 basket, combine the rice, broth, salsa, tomato sauce, oil, and salt. Stir well to ensure all of the rice is submerged in the liquid.
  5. Taquitos and Rice
  6. Install a crisper plate in the Zone 1 basket. Place the seasoned beef in the basket and insert the basket in the unit. Insert the Zone 2 basket in the unit.
  7. Select Zone 1, select AIR FRY, set the temperature to 200°C, and set the time to 15 minutes.
  8. Select Zone 2, select BAKE, set the temperature to 175°C, and set the time to 10 minutes. Select SMART FINISH.
  9. Press START/PAUSE to begin cooking.
  10. When the Zone 1 timer reads 10 minutes, press START/PAUSE. Remove the basket and transfer the beef to a medium bowl. Add the refried beans and cheese (if using) and combine well. Spoon 2 tablespoons of the filling onto each tortilla and roll tightly. Place the taquitos in the Zone 1 basket seam- side down. Reinsert the basket in the unit and press START/PAUSE to resume cooking.
  11. When cooking is complete, the taquitos should be crisp and golden brown and the rice cooked through. Serve hot.
